Tamale Peppers


A new meatless (not protein-less) dinner.
*serves 4 (but we had left over filling that we put in tortillas for lunch the next day)
4 medium bell peppers (we like red and yellow best)
1 cup diced fresh tomatoes
1 cup black beans rinsed and drained
1 cup frozen corn, thawed
3/4 cup salsa
1 cup shredded cheddar cheese
1/4 c cornmeal
2 green onions, chopped
2 Tablespoons chopped fresh cilantro

1) preheat oven to 350. cut tops off bell peppers and remove seeds. Set aside.
2) In a large bowl combine all ingredients except only 3/4 cup of the cheese.
3) spoon mixture evenly into peppers, and top with remaining cheese.
4) Place stuffed peppers in an 8x8 baking dish. add 1/2 in water to pan (we didn't add water and they turned out great). Bake, uncovered, for 50 minutes or until peppers are tender and filling is hot.

Ginger Glazed Mahi-Mahi

Ingredients

  • 3 tablespoons honey
  • 3 tablespoons soy sauce
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon grated fresh ginger root
  • 1 clove garlic, crushed or to taste
  • 2 teaspoons olive oil
  • 4 (6 ounce) mahi mahi fillets
  • salt and pepper to taste
  • 1 tablespoon vegetable oil

Directions

  1. In a shallow glass dish, stir together the honey, soy sauce, balsamic vinegar, ginger, garlic and olive oil. Season fish fillets with salt and pepper, and place them into the dish. If the fillets have skin on them, place them skin side down. Cover, and refrigerate for 20 minutes to marinate.
  2. Heat vegetable oil in a large skillet over medium-high heat. Remove fish from the dish, and reserve marinade. Fry fish for 4 to 6 minutes on each side, turning only once, until fish flakes easily with a fork. Remove fillets to a serving platter and keep warm.
  3. Pour reserved marinade into the skillet, and heat over medium heat until the mixture reduces to a glaze consistently. Spoon glaze over fish, and serve immediately.
We Just tried this recipe, and it is awesome.

Black Bean Salsa

1 can black beans, rinsed and drained
1 can corn, drained
1 red pepper, chopped
2-3 green onions, thinly sliced
1 garlic clove, minced
1/2 bunch cilantro, chopped
1/4 cup olive oil
4 Tbsp red wine vinegar
1 tsp lime juice
freshly ground pepper
salt

Mix all ingredients together and serve with tortilla chips.

Christian's Man-cakes

1 cup whole wheat flour
1 cup white flour
2 TBS sugar
4 tsp baking powder
6 TBS milled flax seed
2 egg
2 cup milk
2 TBS oil
2 Bananas
Frozen Blueberries
*No need for syrup

Combine all dry ingredients in a bowl. Add milk and oil to dry mixture. In a separate bowl beat egg whites with an electric mixer until fluffy (this is important as it keeps the super thick pancakes fluffy), and drop the egg yolks into the dry mix. Fold in egg whites, sliced bananas, and frozen blueberries. Cook on griddle. Enjoy a very filling Man-cake breakfast.
