Richardson Waffles

2 cups flour (white, whole wheat, or half and half)
2 cups milk
2 eggs
5 tablespoons oil
1/2 teaspoon salt
1 teaspon baking soda
2 teaspoons baking powder
1 teaspoon vanilla

Beat eggs until fluffy. Mix in wet ingredients, then add dry ingredients and mix just until smooth.

Christian's Man-cakes

1 cup whole wheat flour
1 cup white flour
2 TBS sugar
4 tsp baking powder
6 TBS milled flax seed
2 egg
2 cup milk
2 TBS oil
2 Bananas
Frozen Blueberries
*No need for syrup

Combine all dry ingredients in a bowl. Add milk and oil to dry mixture. In a separate bowl beat egg whites with an electric mixer until fluffy (this is important as it keeps the super thick pancakes fluffy), and drop the egg yolks into the dry mix. Fold in egg whites, sliced bananas, and frozen blueberries. Cook on griddle. Enjoy a very filling Man-cake breakfast.

German Pancakes

6 eggs
1 cup milk
1 cup flour
1/2 cup butter or margarine (a single stick)

Directions: Place the butter in a 9 x 13 pan to melt. Mix the eggs, milk and flour. Pour the egg mixture into the melted butter and bake at 350 degrees for about 25 minutes.

Stuffed French Toast

Eggs
Bread
Strawberry cream cheese
sour cream

Blend eggs. Dip bread in eggs. Cook bread on griddle. Mix cream cheese and sour cream together and spread inbetween two slices of french toast.

Overnight French Toast

1/2 cup butter
12 slices white bread (or 6 slices sourdough)
1 cup brown sugar (can be 2/3 cup)
2 tsp cinnamon
5-6 eggs
1 1/2 cup milk

Melt butter in 9x13 pan. Put half the bread on bottom of pan. In a bowl mix sugar and cinnamon. Sprinkle half of sugar mixture on bread. In another bowl mix eggs and milk until blended. Pour over bread layer. put next layer of bread, layer sugar, layer eggs, sugar. Cover and refrigerate overnight. Bake covered for 30 minutes at 350. Uncover and bake for about 20 minutes or until set & cooked through.

Oatmeal Bars

** I love these bars. They are so good tasting and good for you. I give them to my kids for breakfast and I don't feel guilty**

1/3 Cup of baking mix ( Bisquick or pancake mix )
1/2 tsp. Cinnamon
1/4 Cup milled flax seed or wheat germ ( or use both )
2 Cups Oatmeal
1/2 Cup Peanut Butter
1/2 Cup Apple Sauce
1/3 Cup Honey
1 egg
1 cup of any combination of choc. chips, raisins, or butterscotch chips ( whatever your kids like)


Mix all ingredients together. Push down in a greased 9 x 9 inch pan. Bake at 350 for 2o min.
Sometimes I freeze the bars in individual servings to through in the kids lunches.
